I always add Louisiana Pink Salmon to my gumbo.

I have a semi related CSB. Lasst yr at the outdoor show in Lafayette, there was an older fella (mid 60's) that was pushing some freeze dried gumbo that comes in a bag, just add rice. He was looking kinda sad, so my Dad walks up to him and says "hey man, why the long face?" Guy replies " mais, you see dis right here... I'm in Lafayette, Louisiana trying to sell Gumbo from a bag, to a buncha coonasses.

Stuff smelled ok, but I wasn't brave enough to try it...

I drop 2-3 dried chipotles in my stock I make for gumbo. Damn good.....yea I know.....dont spice the stock.....I got it under control....
