Who's cooking in the main contest? Who's cooking in the mini pot contest? Who's just going to have a good time?

Limited yes. But it doesn't take much to make a good tasting jambalaya.

That's due to the judging criteria. More points are given to imparting a "predominate meat flavor" to the rice than the "overall flavor" which is the seasoning blend. So if you want to win, you better get that chicken flavor into your rice and not overpower it with seasoning.

May do a mini pot. I have never cooked a big pot over fire. I guess I'll have to give it a try one day.

I was thinking of doing the mini pot again this year, but a buddy of mine is doing a BBQ that day. I'll probably be out there Friday night.
