Always found that the Jambalaya festival winners lean toward the bland end of the spectrum

Limited yes. But it doesn't take much to make a good tasting jambalaya.

May do a mini pot. I have never cooked a big pot over fire. I guess I'll have to give it a try one day.

I was thinking of doing the mini pot again this year, but a buddy of mine is doing a BBQ that day. I'll probably be out there Friday night.
