Stopped in scott last week and picked up some of their frozen seasoned chicken to try and alot of cracklin.
Anyone have any creative ways to cook it? or what to make with it?

Is it the whole chickens with stuffing or cut up?

Cut up
I also bought some of their stuffed pork chops, but gonna save that for another time

I would probably put it on a smoker, if weather permits. You should probably add more seasoning b/c you'll lose some during the defrost.

My favorite way to spruce up chicken is to braise it. I don't know if you're talking about chicken with bones or not, but it doesn't matter. Bones are better, but you can do it with boneless chicken too.
Sear in enameled cast iron. Remove chicken. Add shallots/garlic and cook until soft. Deglaze with white wine and chicken broth (or just chicken broth--doesn't matter). Return chicken to pot with thyme or whatever herbs you like. Place pot in oven and cook on 350 until chicken is done. Return pot to stove and remove chicken. Get the sauce simmering good to reduce. Add some dijon mustard if you want--I love it added. Plate chicken and spoon sauce over it.
