I just bought a new enameled cast iron pot, what should I cook in it first?

I want to cook something today but can't decide on what I want to eat. Anyone have some good recipes that I could try?

Gumbo for something on the stovetop

If you want to braise I'd do either short ribs or osso bucco

Braise something. Short ribs are the best.
Could also braise chicken thighs.
