But he asked why he didn't step in in reference to the flipping.. Not to the well done steak.

It's one thing to prefer a lesser cooked steak. It is entirely different to tell someone to stop flipping your steak. Let's face it.. Whether you're a fan of flipping multiple times or not, the difference is minuscule.

3 to get proper criss cross grill marks... SUPER hot flat iron grill pan.

ETA:

My "7th Inning Steak"... "Fast Marinade" as game starts... Start heating the grill pan in the 5th Inning... Cook the steak during the stretch.

I put mine on a 45 degree angle to the grates. Flip to the right, flip to me, flip to the left.

3 times total and it gives the steaks a nice criss cross grill mark.
