How long to cook a carcass for broth?

Put my carcass on to boil at about 8:15 tonight with some celery (I used all the other good veggies for dressing) - can you cook it for too long? I usually go between 2-3 hours. I just cracked the lid so it could reduce a little.

I usually slow roll for 2-4 hours depending on what I have going on

I'd bake it about 20 minutes at 375 then low boil for 1 1/2 hours.

Drop the temp down just a little below a boil and let it go, when you are ready to go to bed just put it in the oven at about 200 and let it simmer all night
