How do you prefer your meat cut up?

Example...giant pot of red beans and rice or jambayla.

Do you prefer your sausage, Tasso, chicken, pork cut up in chunks with less pieces or smaller cubes and more pieces?

Smoked sausage cut into 1/2 moons 1/4" thick

Andouille cut into 1/4 moons 3/8" thick

All other meat cut into 3/4" cubes.
