This works when in a jam. Two boxes makes a big arse pot, you can add more water, just taste it when cooking.

I did similar many times in college. Would put cut up whole chicken, onions, bell pepper, celery, okra, green onions, and a few shakes of Tony's seasoning blend in the crock pot. Mix up enough water and Tony's Instant Roux Mix to fill the pot.

I usually put a hunk or two of sausage in too, then went to bed drunk and let it all cook over night.

The sausage would be cooked to death by morning, so I waited to add most of it, and some more green onions, in the morning for a little more cook time. I'd also use tongs and a fork to remove the chicken bones and skin.

It wouldn't win a contest, but it was pretty damned good under the circumstances.

Not hard at all. It just takes about 10-15 days to get here, then I have to take a helo to pick it up which could add another few days.

That would be great if it would stay frozen for the 10-15 days it would take to get to me.
