Gumbo help!!!

Cooking gumbo today....the roux is not mixing with the boiling water. First for me.
Been on about 40min boiling. Used canola oil and flour for roux.
Some of the roux mixed and some is just floating on top.
Any thoughts?

Sounds like your oil is floating. Just whisk the hell out of it.

Happened to me the first time too, added the water too fast. Just keep whisking it up and should combine.

You put cold water didn't you?
I add room temperature or slightly warm water to my roux. Cold water makes it break.

Not really....usually I add the roux to boiling water. This time, I was in a hurry, and added it after warming the stock slightly.
Won't make that mistake again.
