Found the recipe (see below) as I will try to duplicate this in my kitchen. I'm very familiar with braising and can improvise on the tamarind vinaigrette and cilantro oil sauces. Will call 2 local slaughterhouses to inquire about farm raised pig heads.

I'm busy the next several weekends but will find the time to experiment with this dish and keep y'all posted on my results.

Going here tonight. Thanks to the OP for the recommendations. Will def go with duck tongue and goat carpaccio.

The miso shishito peppers are good, but I have the recipe and make them at home a good bit. Very easy. So I'd skip that.

The pig face is unreal.

Also the green beans side is really really great. It simple but awesome.

I was back in Chicago last weekend for 3 days/nights and couldn't fit G&G in my schedule.

Weather was brutal at -4 degrees and -31 wind chill - we ordered Giordanos pizza , I cooked gumbo for my relatives one night (see below pic), and dined at Cucina Biagio ... incredible Italian food


as mentioned multiple times, get the pig face !

my uncle Louie had never eaten gumbo before. He ate 5 bowls of this

Hard to admit liking much about chicaago in the winter, but my god this was top 5 meals in my life without question. Apologies in advance for no pics, the food is so well timed coming out that photos are an afterthought:

Miso Hungry bread = wished I had another roll

Raw British Columbia oyster- wish I had more than one

Green beans - solid recommendation

Calamari bruschetta was great

Pan roasted drum was solid (not halibut tonight)

Seared scallops were good

Tie for favorite between pig face and pork shank

Crispy short ribs were nice

Goat belly was mixed with a considerable amount of crab, lobster, and butter, all you could taste was lobster and butter.... Left me wishing I had strong-armed colleagues into goat carpaccio

Black coffee was phenomenal

Goat cheese cheesecake.... Regret not getting my own

Squash something dessert wasn't memorable

Would eat there again in a heartbeat!

Yea that place is awesome. I think my favorite dish was the halibut.

I loved the pig face but i think the egg on top is not needed at all.
