Been eating this a couple times a week for the past month or so- really good very easy to make cheap, tasty meal:
Take a few frozen biscuits, let them thaw.
Make your salmon salad in the same way you would tuna salad- I just prefer canned salmon. I prefer it drier than most, so however much mayonaisse suits you. The crucial ingredient for me is a shitload of dill weed and black pepper as well as some blackened redfish seasoning and Landry's. Some people like to put relish or apples or vinegar in their too. The salad is infinitely variable.
The key is cooking the biscuits, just flatten them out once thawed and coat lightly in flour. Instead of baking them pan fry them on a skillet coated in your oil of choice- I use olive oil.
You end up with crunchy fried biscuit discs.
Make a sandwich; proceed to be sated.
I know this is hardly groundbreaking territory, but i'm telling yall, the flattened biscuits and salmon twist are a pretty neat variation on a classic.
