I always tell people do whatever you want. The temp is not hard to regulate. Just do some reading on whatever you're cooking before hand and learn from how other people have done it

Update... I grilled chicken quarters. After lighting the charcoal I closed the lid had the bottom vent all the way open and the top cap off. looked at the time went inside to get seasoning it took 5 minutes. The temp was at 600 deg after 5 min. I couldn't be leave how fast it got to that temp. I then controlled the temp to 325 to grill the chicken with lid close. My neighbor came over and I got carried away talking/drinking with him and swore the chicken would be over done and dried out but it was still moist. Wife and kids said best chicken I grilled so for. Tomorrow I will smoke pork butt/ribs with deflector. I am impressed so far I will give and update after tomorrow's smoke hopefully with pics.
