Deer butterfly steak, best way to cook?

Got two deer butterfly steaks. What is the best way to prepare or cook these bad boys? Anything I can do off the grill, possibly on the stove top in a skillet?

Medium rare whatever you do. I've never understood the broad term "steak" for venison. Steak from where? That's what matters.

I'd tenderize it, season some flour, dredge, and pan fry in a cast iron skillet and then do a gravy, possibly considering smothering the steak at the end. Or simply pouring the gravy on top, chicken fried steak style. I'm just not much on grilled game steaks but maybe I've just never had a good one.
