Croc pot weekday meals

Trying to gather a group of recipes together to cook during the week. Full croc pot meals.

Possibly something I can put together in a freezer bag on Sundays and throw in the croc pot before work that morning.

Blend a can of chipotles in adobo with garlic, lime juice, cilantro, salt, and a little cinnamon. Lay a pork shoulder, chick roast, or a bunch if chicken thighs in the slow cooker with a quartered onion. Pour the sauce on top, add water or Mexican beer to make sure it doesn't burn, and cook till it shreds. Easy taco or burrito meat. I usually make rice and do burrito bowls.

I'm fond of getting little cheap steaks, hitting them good with pepper and tossing them in the crock pot with beef broth, a little tomato paste and whatever veggies I have: potatoes, onions, carrots, mushrooms, bell peppers. Sometimes if I wanna be fancy, I brown the meat first.

I always enjoy a classic pot roast and gravy with quartered new potatoes and carrots.
