Been wanting to do this for awhile after seeing these threads years ago. Decided to follow in the footsteps of these threads below:
CHEDBALLZ

Motorboat
LINK
Started off making a stock with my already cut but not cleaned heads, some fat I saved, onions from the boil, few onion tops, and a bit of parsley. Forgot to save some non cut heads/pieces for this part.
Used CHEDBALLZ Loaf Mixture recipe with some green pepper to make my stuffing
Followed Motorboat's recommendation and baked the stuffed heads for a bit. This pic is prebake.
Made some roux
Cleared some onions
Added the rest of my boiled tails, stock, onions(some from boil/some not), green pepper, parsley, green onions, and garlic(from boil.) Let it cook for a bit.
Added in the stuffed heads and let cook for a bit more.
Plated and now I know what I am doing with leftovers every year from now on
