Yeah, that's what I'm thinking. I could also see Grouper, Wahoo, or even Sheepshead.

OP answered how he deals with a soft fish from becoming mush, I have to imagine that keeping the fish in chunks with the backbone goes a long way towards flavor and even texture too.

Makes sense, thanks, I will try this the next time I have some fresh fish that I can clean into chunks with the bone like you've done.

I've done it that way with flathead cat.
