Bone In Pork Shoulder Roast

I picked up a small 2.5lb bone in shoulder roast yesterday. I assume this thing will cook just like a standard butt.

I threw it on the smoker a few minutes ago........with the intent of some tacos later this evening.

It didn't have the fat cap like a butt so I put some bacon on top for safe measure.

Internal temp at 175°..........still feels pretty tough with a fork.

You have to keep going, but can wrap in foil. You need to get it to 200+ degrees.

That's what I'm shooting for..........I've just never cooked one quite this small...........

I just wrapped to try and speed it up.
