Black Bean Soup Recipe

Anyone have a good one they would share here?

Black bean soup is one of those can't mess up meals to me. I love black beans.

I basically follow that serious eats but I add bacon or a ham hock. Pork + beans never failed anyone. Also, if time isn't an issue go for dried beans
I have long wanted to try this recipe. I will do it once the temp drops obviously doesn't really help you but i just thought it looked good.

Red light bell peppers
4 cans of black beans
Large can rotel tomatoes
2 cans chopped green chilies
3-4 shredded chicken breast
3-4 chopped chipotle peppers in adobo sauce
1 bag of frozen corn
Chicken stock
Lime juice
Cilantro
Ground coriander
Ground cumin
Want it vegetarian, take out the chicken and stock and substitute water or vegetable stock.
I serve with tortilla chips on the side and cheese on top.
The above is guidelines, I don't have exact measurements.
