Blue cheese and white truffle oil over fresh fried potato chips, and they are awesome. The wife and I love Bistro Byronz when we are in town.

It's actually drizzled with a blue cheese and truffle velouté sauce then topped with crumbles and green onions. They're delicious.

The oil and cheese is heated making a creamy sauce with chunks of blue cheese, so yeah. The first time we had it was in a Wolfgang Puck restaurant, but BB version is better IMO.

And they deserve to, they are really good to start off a meal. Maybe worth a try for you R2R.

I'll give it a shot next time I go there since it seems so many folks are into them.

Maybe I'm just wary of them because I had some brie fries app at a restaurant in Nola recently at the rec of Yelp users and the waiter, and they were terrible.

I tried fries made with duck fat, which would seem to be good, but were a soggy mess. Two for two on this, maybe they didn't know what they were doing but I won't get them again.

I literally just made some last night minus the truffle oil because I'd probably get stabbed asking for truffle oil in Chalmette.

Anyway, just melted some butter and then sautéed some fresh garlic and whites of the green onion. Tossed in a heaping handful of blue cheese and a small amount of whole milk to get the proper consistency. Drizzled over some homemade chips then topped with crumbles and green onion. 'twas delicious.

Yeah that's no good. Duck fat should be used in sauces .. not on food with texture that will absorb it and turn to mush.

we usually get the bc on the side and just dip the chips in it. im not the biggest fan of blue cheese but the dish is good.

shrimp remoulade is really good.
pot roast is good but the portion is kinda small
hamburger steak with the mashed potatoes all mixed in is a great choice

eh. looks okay. like was said .. probably too soggy by the time you get 1/4 of the way through it.

I've never seen them get soggy, but maybe we eat them too fast.

Tuna app is delicious.
Shrimp Louie is very good.
Vodka freezes are tasty.

I've never heard a complaint about the Shreveport location. Sometimes service can be a little slow, but not too bad.
