A mexican/Latin dish.

Tonight I fried up some tortillas in strips, removed from oil.

Next you mix up six eggs, three tablespoons of rotel, and some cheddar cheese.
I browned some venison sausage (uncased) and mixed all together in an 8 inch baking pan (like the one for brownies)
Lastly you cook for about 35 minutes at 350 degrees. Warm a tortilla and wrap it up like a burrito once it's done.

Anyone ever try this? I'll let you know how it tastes.

Wow. Where I come from, ´migas´ are bread crumbs, and what is made with them is very much in line with yáll´s Jambalaya.

A person I know made them like this at the beach and I was very impressed....decided to make my own version. Turned out very good....cant figure out how to post pics from Flickr

Migas is the tits. Haven't had it in a while might be time to make it.

I make them on the stove for breakfast every so often. Here is the recipe I use:

Serves 2 hungry people

2 tablespoons vegetable oil
1 small onion diced
1 clove garlic
1/2 cup salsa verde or small can of green chiles
1/2 cup tortilla chips broken into small pieces
4 eggs
1/2 cup shredded cheese (cheddar, jack, whatever you got)
Salsa, sour cream, cilantro to top

In a large skillet over medium-high heat, heat oil until ripples Add onion and garlic with pinch of salt and stir carefully until translucent Add green salsa and chips, stir until chips are slightly soggy Add eggs and stir until cooked, add cheese until melted Serve with toppings and enjoy


Only difference is I use red salsa, not green.
