Anyone out there have an incredible Drum recipe?

Seems like home recipes for Drum are few and far in between on the interwebs. Lay it on me if you have a good one. My wife orders the drum at every restaurant we go to. As the main cook in the house I am starting to get the message

This is from Ralph's on the Park in New Orleans. I've made it numerous times for various women. The current (and last) Mrs Pmac loves it. The flavors are amazing. Enjoy.

Just look for redfish recipes. They cook very similar, in fact most people probably can't tell the difference.

Your gunna laugh but I've done this with redfish, boil it for a short time in water with salt and crab boil, chill it quickly, use it as a crab meat substitute in crab au gratin or other crab meat recipes

THIS!!!
Using black drum as fake crab meat is the best way to utilize this fish.

I've done it with sheepshead so I'm sure it would work with redfish.

Yep, gently boiled sheepshead wrapped in cheesecloth

I'll try that. Sometimes it feels wrong to shell out for jumbo lump just to re-purpose it and cover it with cheese and bread.

As noted above several different food items can be used if you're in a bind

I often substitute alligator jowl meat when preparing turtle soup. Nearly identical texture and taste, yet much more affordable and available

Look at the menu for Louisiana Lagniappe for ideas. Every fish dish there uses drum.
