Albasha's eggplant moussaka? That shite is damn good, but I can't put my finger on the spices.

I've never had theirs, but, most mousaka seems to have a hint of a mincemeat taste, sort of...??

Cinnamon may be the secret spice your missing.

I'm guessing since I haven't eaten at Albasha in a while (live to far away and miss some good Lebanese food)but, probably cinnamon, allspice and cardamon.

The cardamom is something I was going to try. Didn't think about allspice or cinnamon. There's something definitely middle eastern about the taste that I just can't figure out...

Olive Oil
onion
bell pepper
eggplant
tomatoes..

can't think of more now.
