Any Good Chimichurri Recipes?

I work a lot in Latin America and am always shocked at how the chimichurri sauce has not really made its way to the States yet. I had a mango chimichurri sauce last night that was fantastic.

Anyone got a good recipe?

H-E-B (if you're near one) sells a Chimichurri sauce in a jar that is fricking fantastic to dip fried plantains into.

Mint
cilantro
garlic
lemon zest
Olive oil
salt and pepper

Or use whatever is green from the garden. I've used romaine in a pinch before.

This except I haven't tried lemon in it. I use red wine vinegar and add oregano.

Does everyone food process this or by hand? I just chop parsley/cilantro with a knife and combine with oil/vinegar
