We're less than 2 weeks out. The cooks meeting was last night and no thread yet? Who's in this year?

That's the problem...I've never tried, but one of these days I will.

All my pots are set up for gas. I don't have plain stands or heat shields. Don't even have a 10 gal pot for the first round. I always find plenty of excuses why I can't do it. I've been saying next year for about 5 years now.

but on a side note, I got a letter that the Cystic Fibrosis Swamp Pop festival (which had a great Jambalaya cook off) is moving from Lamar Dixon to The Texas Club....WTF

I had the same reaction when I got that letter Tigerpaw. I made the finals there for the first time last year. We've been looking forward to it all year and then that. We're not cooking in it and I expect they'll see a serious dip in the number of cooks. It's a rough neighborhood for one, and also where do they expect to put 100 cooks? They won't have to worry about it because I expect that the crowd will be much smaller.

In the letter it said they were saving 400% by having it there, I thought to myself, you are going to loose 800% because no one is going to show up.... oh well, hope the boucherie is still at lamar dixon

I didn't even think of the Boucherie. That may be a good replacement for us. Did they even end up having it last year after the flood?

They had it in maybe October? It was great, pretty much the same setup as the old swamp pop for the jambalaya contest, but the awards were in the arena and not the air conditioned trade mart building, first time they did it at Lamar and I do not think they had as good of a crowd as they wanted, but hope they have there again this year
