Moose sausage recipes?

Got a bunch of moose from the in-laws (native Yup'iks)

Already grounded up 15 lbs or so for hamburger.

A lot of roasts and stew meat too.

Need a couple of solid sausage recipes.

Andouille, maybe some summer sausage too.

Id cross post this wityh the food board but this board has a lot more folks who cook with game Meat!

I wish I had squirrel. Ground squirrels only up here.

UAF Cooperative extension has some good info on game sausage. I usually refer to them when making my own.

The local butcher here does a great job though, might find one in the area?
