iPhone 5S Mystery Data Usage Causing Me to Switch Carriers

My son's iPhone uses large amounts of data for no apparent reason around 1 or 2 AM. Even with Wifi turned on, it will sometimes use 1 GB over night while he is asleep. He is pretty tech savy and has researched the problem pretty thoroughly and spent hours on the phone with Apple and Verizon. Neither can determine the cause. Apparently it is not an uncommon issue according to the Apple forums he has been reading and no one seems to have an answer other than to buy a new phone. At this time, we are unsure if it is an Apple issue or a Verizon issue.
As a result, I'm thinking about trying another carrier that has an unlimited data plan for his phone. I've noticed that there are a lot of smaller carriers that offer unlimited data plans.
Question 1 - Is anybody familiar with the data usage problem? Any luck solving it?
Question 2 - Has anybody had good success with one of the smaller carriers for an unlimited data plan for the iPhone?
Thanks

Is your router locked down with parental controls that your son can't get around?

No, I don't have any parental controls on the router. I'm not sure if it is losing a signal or what the issue is that causes this.

Turn off mobile data when you're not using it

So you can't think of any reason your son would prefer to watch porn on the cellular network rather than on your wifi?
Could be iCloud or something but I recommend at least looking to see which app is using the data. You can go to settings -> cellular and towards the bottom it'll show you list of all the apps that can use data and it even tells you how much data each app used.

Is this a recent occurrence -- since iOS 9? Check in Settings--> Cell Data if the "WiFi Assist" at the bottom is turned on. If you are far away from your router and the signal is not great, the new software will jump to cell data to complete the action -- at 1-2 AM it's probably updating apps. For some dumb reason it's on by default.

Had the same issue.
From what I've found while researching it, it has to do with the programming that deals with the wifi signal. In the event that the speed/signal of the cellular network is faster than that of the wifi, it will automatically use the cellular data to provide the fastest speed/signal. This occurs even when the phone shows that it is connected to the wifi.
What I started doing was turning my cellular data off when I get anywhere where wifi is present. Like, when I get home, I turn off cellular data by going to settings->Cellular->and flipping the switch off. This will disable the data, but will also prevent picture messages from coming through from a non-iphone until the data is turned back on.
Alternatively, you can also turn on airplane mode and simply enable wifi, however this prevents calls and non-iphone messages (in general) from coming in.
