Dont understand the hatred for choupique...
If caught and cooked all within a few hours it can compete with ANY fish.
Prized in a lot of high end restaurants.
Buddy of mine in philly kept talking about this amazing fish dish a local place had...they tried to charge 40+ dollars for choupique seared in sesame oil with a little fresh pepper jelly on top.
He bought it, I couldnt bring myself to do it. Tasted it, and it was well worth the money.
Its just bowfin right?

Is Choupic an accepted spelling for the fish? I've always considered Choupic the town and choupique the fish.

It is choupique, if that's what you choose to call it. Like someone said, it's really a bowfin...or a grinnel...or a spottail...or a dogfish. Even an Amia calva
The word choupipique from a Choctaw word meaning “mudfish.”

I never knew what a choupic was until reading this thread.
I always wondered what Sushi's surname meant. Now I'm wondering if I've ever eaten choupic. JSM ate some white perch jerky the other day.

Yes you can freeze it. But I like it fresh out of some cool moving water. That's some of the best fish I've eating if prepared correctly.
