We ski about once a year and I really need to replace my 10-year old Columbia parka that weighs a ton and looks like it's from the 80's. Same situation for my wife. We are not hardcore skiers (stick to the blues mostly), but I anticipate us going once a year or every other year for the foreseeable future.

Since we don't go hardcore, I don't tend to sweat too much so I need something that will keep me warm (breathability would not be much of a concern), especially on the lifts. This makes me feel like I should go with something insulated rather than a shell. Should I consider a good shell and just layer up as necessary? This scares me because both my wife and I tend to be sensitive to the cold and I'm just worried that a shell won't be warm enough.

I don't have an unlimited budget, so the $400-$500 or more options are not realistic. I don't think I would want to go over $250. That seems like a realistic expectation in doing some internet searching, but I'm not sure what brands are really worth spending that much on.

Any suggestions are much appreciated.

I bought a pretty badass NorthFace jacket from Masseys a few years ago for around 300$. It's blue with a fleece liner that you can wear on warmer days, and has a very nice shell to go with it. I've been skiing in it several times now, and it is perfect.

If you look on backcountry.com they always have deals. I gotta Mountain Hardwear Shell for <$150. With a good thermal layer underneath it was plenty warm enough. If you ski once a year who cares how stylish you look??

I hear you. My only concern with a shell is whether or not it would keep me warm enough. It's definitely an option.

Definitely go with a 2 in 1 fleece/shell combo. I use my shell as a rain jacket by itself and wear it without the fleece most of the time.

If you go to backcountry.com look at Department of goods.com. It is backcountry's outlet site and they have really good deals. As far as brand I'm partial to Mountain Hardwear also.

THis. Go with the layers. You don't need some sophisticated system if you are going once a year. Just a base, shirt, liner and a shell. Remove as necessary.
