I wouldn't eliminate "bite" if buying for someone who is into whiskey. I always find Bookers is a great gift bottle because of its presentation and it happens to be very good to great depending on which release you get. But it will definitely have some bite as it's over proofed.

Finished whiskeys are unique too. Something like a Joseph Magnus Murray Hill Club or special release will fit your price range and are interesting and generally really good bottles.

If you're buying the someone who is into whiskey, I wouldn't worry about it having a "bite".

Greenspot Irish Whiskey, around $60-75, biscuity smooth.
