Besides the ones you mentioned maybe a custom knife. You can engrave it how you wish and have a fancy handle. Filet knife, skinning knife, all around utility knife, whatever you think fits your and presumably his outdoor lifestyle.

I think pocket knife is a good idea too. My pops taught me to never be without one and I can't remember a day I haven't had a pocket knife on me on any of the days I can remember in my 41 years.
My pops gave me the first one I ever had and I carried it for probably 20+ years. I still have it, but I don't carry it anymore because I couldn't stand to lose it.
