Looking for Healthy, yet tasty way to prepare salmon

Poach in white wine or champagne. Lightly.

Treat it like you would a good filet with sea salt and fresh cracked black pepper. Pair with a salad of field greens, grape tomatoes, English cucumber and goat cheese with a simple vinaigrette of fresh lemon juice, dill, and extra virgin olive oil.

Smear fillet with Sweet & Spicy Tabasco. Sprinkle with Prudhomme's Magic Salmon Seasoning. Give a quick saute to crust the surfaces, then place pan in oven to finish. Do not overcook (timing depends on thickness). Take out when still 'raw' in center and let sit for a few minutes. It will firm up nicely.
