Preparing to homeschool here, but ours are very young. FWIW, I’ve travelled extensively and have some insight into what is useful. The good news is, if you and your wife are fairly well-educated, you can give your kid a world class education for around the same price as private school. Teach what you can yourselves. Hire private tutors for languages (these will be important, at least for another decade or so until automated translation improves). The language tutoring can be done via zoom. Maybe put a job listing in the LSU paper. Supplement by making TV time only available for programming in the languages the kids are learning (or specials on educational topics). There are a lot of books that guide parents on at home science experiments- just search on Amazon. eBay has a lot of old, neat science sets (electric motors, metal work, chemistry, physics, etc.). Find books (again, plenty on Amazon), that are written in English and the language you’re teaching the kids. Consider cultivating appreciation for nature and history with field trips- bird watching at a marsh, with a field guide for identification; hiking around Port Hudson or whatever is close to you; doing a kids program at a national/state park, etc.
