Did it 4-5 times with clients during the 12 years I covered Nola. All when Tory was in the kitchen. Its a phenomenal experience. As suggested get the wine pairing so you don’t have to think even a little bit. Just sit back and consume.

Agree with the people saying to get the wine pairing. Let the professionals take care of everything. It's similar to omakase in that you want to be able to just sit back and trust the chef. The point is to just let the food and wine come to you as the chef sees fit and just enjoy the whole experience of letting someone else be in charge of your mouth and stomach for a couple hours.

It will definitely not be a glorified sampler platter at Commander's. It's going to be fine dining and it's going to be freaking GOOD. Don't expect The French Laundry, though, either.
