How much money are you prepared to spend? You have to have someone with security knowledge. You have to have backup servers for when something goes wrong with the live server. You have to have a redundant power supply to avoid downtime.
It all depends on how big you guys are. If it's a SOHO then you may be able to get away with having a dedicated server at the office and a backup for that server and a VPN to get you into that server.
