Not that it matters I understand your point, but In Louisiana, it's my understanding that the burden is on the State to prove the act of murder wasn't self defense.

It is because of the legal presumption of innocence that is afforded to individuals which is the backbone of our legal system. One of the main reasons for doing this is to protect the individual against an unjust and abusive government. The same reason that there are protocols that must be followed regarding unmasking to protect civil liberties for example.
