You can protect property with deadly force when you’re both on the property. Once that dude is fleeing and no longer a threat to you physically, you can’t use deadly force. Deadly force is only for combating deadly force. Chasing down criminals is for police.

I'm almost positive that attempting to take a gun put of someones hand is indeed considered a very probable physical threat to that person
