I can only speak for Branson- we take a trip there every year.
Buffalo Ridge was a blast for our group. We decided to replay it after our first round we had so much fun.
Top of the Rock is pricey, but a fun to play once. All par 3 course with really cool views/driving range/ and restaurant area to eat afterwards.
Mountain Top is a 13 hole course, fun as well.
Payne's Valley is Tiger's new course up there, haven't played that one yet. Looking forward to getting back to Big Cedar to add this to the rotation.

I played Pointe Royale last year since we were staying at a condo on one of the holes. It was a pretty decent course. My only complaint was there was no driving range. It had a hitting net to warm up.
