Anyone done this?
Going with a group of 4 total-2 couples, we will likely do 1 day of actual Oktobersfest, then spend the rest of the week (5-6 days) exploring the rest of the country or surrounding country.
we are just starting to plan this so any recommendations are welcome!

Yes been twice. Probably 7 days total. Don’t go on a weekend. Go during the week and get there early. Then stay all day. Food is fantastic, ride the rollercoasters when you are drunk.
Dress in a plaid shirt or buy Oktoberfest shirts. Most where them.

Visit Dachau if you can. It's not far from Munich. You can take the train and bus, or hit one of the full blown tours. The tour of Berchtesgaden/Hitler's Eagles Nest is a good trip as well.

Been a few times. Quite a fun time. As the other mentioned, the weekend is packed and you'll only be able to sit outside. During the week, the halls are more available for everyone. Find a section not reserved and sit there all day. (I believe a few of the tents are marked for reservations after 5 or 6, so you may have to move outside after that time) But still a fantastic time. Prost!!
