New Orleans Crawfish Boil

I was in town this past weekend for a conference. I ventured away from the quarter and spent some time on Magazine, Irish Channel, and Mid-City. I ate some great food.
I ordered 5 pounds of boiled crawfish at 2 different restaurants and got 2 totally different flavors and styles.
1 restaurant was the typical to what I am used to eating. Clean boil, clean crawfish, and great spicy flavor. The other restaurant had mounds of dry seasoning and very oily/buttery base all over the crawfish.
This was my first time in ordering and eating crawfish in NOLA. Which one is normal?

I’m going to guess the dry seasoning and oily ones came from Tracey’s.

Did you go to that "Boil House" place? If so those are Vietnamese style.

Not totally related, but I was in New Orleans last week and saw crawfish selling for $12/lb in the French Market. Spent a good few minutes alternating between shock and laughter

Exactly where I got the dry seasoning with oil ones. They had good flavor, just not traditional like I expected.
The other place was Clesi's. Much more in line with a backyard boil. I enjoyed those much better.

So you didn't have "NOLA style crawfish" there. That's Vietnamese style. They were all the rage 3-4 years ago.

There was absolutely nothing to signify this was a Vietnamese style. I technically ordered "cajun extra hot". Never even seen options on how to flavor the crawfish before.
This is what they came out looking like...still good, just unexpected.
