Just about any Porsche is a great choice. Every car enthusiast should drive a 911 at some point in their life (especially an air cooled one). Those cars are built to be driven hard on the regular. It's one of only a handful of cars that can be both your daily driver as well as a track toy. I've had zero issues with the two I own (09 Cayman, 14 Carrera S) over years of driving them both to work and the racetrack. Keep in mind though, if you do track a Porsche with any sort of regularity, you're going to be throwing money at tires and brake pads.
I also have a soft spot for AMGs. The sound of a high revving flat-six is glorious, but there's just something about a big, angry v8 that does it for me (especially the old 6.3). Thankfully, I'll be scratching that itch in about a month when I take delivery of a 19 C63s sedan. It should be pretty hilarious driving a c-class with over 500hp and only 265 width rear tires.
