Every TV is a smart tv.

My family will be on board.

I’ve got ATT fiber optic, my plan is ATT 100, unlimited data. I usually run about 95-125 mbps upload and download.

Doesn't necessarily matter. They need to support the Vue app. See if they have a Playstation Vue app, if not then you probably need to choose between Roku and Fire TV and get one for each TV.

Roku is a simpler main interface but Fire TV is good enough interface and has Alexa Voice Assistant support (saying "Alexa change channel to ESPN" will launch the PS Vue app and change to ESPN, not to mention pause, rewind, fast forward, etc.). Also, for PS Vue specifically, the Fire TV app is better than the Roku version as was mentioned above.

Roku and Fire both come in cheaper stick forms vs. a little more expensive boxes. You can probably get away with the sticks on your secondary TVs, but on your main TVs you'll want to get the box form factor as they have better hardware and will provide a better experience.

Do you have ATT wireless as well? I was sold on PSVue except for not having the History Channel. I did research on DirectvNow as well, and found out I get $15 off of DTV now and $15 off ATT Fiber as well as military discount on Fiber. Totally worth it for me.
I pay $75 for 1gig fiber, $45 for DTV Now with Just Right package, 3 streams, and HBO. Saving about $100 from Dish.
Running wires ROKU Ultras on 2 TVs, the free Roku from ATT on another and an old Roku on another.
We hardly ever run 3 TVs at the same time. Picture is just as good if not better.

TLDR: if you have ATT wireless you are eligible for $15 off each ATT fiber and Sirectv Now.
