1. Looking for a way to plug my Pi into my big screen and play NES, etc., while seated 15 or so feet away. Any legit NES bluetooth controllers out there?

I use the 8bitdo SNES controllers for mine. They work 20ft away.
Haven't figured out a way to get the PS controllers to reliably work for N64 games
8bitdo are the best, they actually make a SNES one that has all the buttons a PS controller would have on it.
Not sure what PS controller you have, but the offical six axis PS3 ones work great in my experience.

3. Other than retro gaming, what else do you use the Pi for?
Retropie can also install Kodi on it and use it as a Kodi box, there are some other mods you can get on it as well, but I have not played with them as much.
Tons of things you can do with the Pi.
You can make an adblock device on your network called Pi-hole so you don't get adverts on all devices without having to install adblock apps.
Homebridge if you have iOS devices to let you use some devices that don't support homekit with homekit.
Sky's the limit with Pi projects.
