People from Ohio have different pallets than those who were born and raised in Louisiana. Little story a good friend of mine told me about some Ohio national guard guys that were down here helping during Katrina. My grind was a Sargent in the Louisiana national guard and was in charge of getting food catered in for the troops from time to time while he was deployed to New Orleans during Katrina. Anyway he started noticing all the bread was usual gone by the time the Louisiana guys were making through the chow lines. Come to find out the Ohio guys were taking it all. So my friend went to their commanding officer and asked what's up? The Ohio commanding officer told him that his guys just couldn't handle the spicy food everyday. It was giving them the shits and other digestive problems. So they were filling up in bread instead. My friend apologized because he never considered that the Ohio guys would have problems eating the food we grew up with.

Point of the story is maybe they asked Joe where or what he likes to eat? He's probably a meat and potatoes guy not a gumbo, jambalaya, etouffee guy..,.yet.

Yep. I am from Ohio. Been here many years. It took a long time to “warm up” to Cajun creole food. It is very good once you get used to it. However steak and potatoes is still very good.
