This is good info...big difference between going to Charleston with the guys, and going as a couple's trip.

If ya'll have never been to Charleston before, I'd recommend staying downtown. You should be able to find some decent AirBnB options, especially that time of year. People might recommend staying in places like Folly Beach or Isle of Palms, but I wouldn't listen to them, unless ya'll are going in the really early fall, when you might still get some decent beach weather. Otherwise, you'll be trucking 30 mins each way back-and-forth to most of the interesting stuff. Downtown is the place to be for first-timers. The entire King St./Queen St./East Bay/Meeting St./Market St. area will keep ya'll occupied for a while. Lots of history, shopping, food, bars, etc.

Tons of great restaurants. It's not downtown, but one of my particular favorites is the Fat Hen. But there's a ton of good ones downtown. Just to name a few...

Hominy Grill

Hank's

These are nicer restaurants. Let me know if you want some more casual suggestions. One of my personal favorites is the Brown Dog Deli on Broad Street. Awesome sandwiches.

Do not bother with the touristy places like Hyman's on Meeting Street or Bubba Gumps, where you'll pay a shite-ton for average food.

The rooftop bar at Vendue is a solid nightspot. I'd definitely check that out.

You hit on a solid plan for fishing. Charter a fishing trip on Saturday. You can drop the ladies off at Marion Square in the morning and they can check out the farmer's market and then hit up King Street for shopping after. That should tide them over for a majority of the day.

Plenty of charter options. There really isn't one that I can recommend more than another. I'd just use google and pick one depending on price/availability.

The Firefly Vodka distillery is a little off the beaten path (Wadmalaw Island), but kind of a fun and unique experience. Depending on your "guide" you can actually get a pretty good buzz going just doing the tasting. Would make for a good couple's outing.

Doing sort of a self-guided walking tour of the homes South of Broad would be a good couples activity as well. Those houses are iconic and really cool to just walk and look at. The entire area is really scenic and you can check out The Battery as well.
