You can, obviously, play the game however you want. That's the beauty of it. My son is playing the game similar to how you're playing it in that he's just wandering around and questing and doing Divine Beasts as he comes up on them. I, on the other hand, went and unlocked every single tower and the whole map before I ever tried to take on a Divine Beast. That's just me, though. I couldn't stand having all those big blank spaces on the map.

That was my original plan after beating the Zora beast. I thought I would unlock everything then get back to the main story. Then, I started worrying that I would forget different things I noticed that I wanted to explore. Before I knew it, I was doing the Gerudo story. So, I've just decided that I'm going to complete as much as I can in an area before moving on. I'm sure I'm only doing about 40% of the quests per map area, though.
