So, I have centipede creeping into my back yard that used to be 100% St. Aug. I like this development. Seed heads are forming. If I want even more centipede, do I let the seed mature or is that even a thing? Or, can I just mow it now?

Just mow it. Let the stolons keep running to expand it.
Reseed lawns in spring. I wait til the soil holds at least 70°. Whichever pre-emergent you use will have specific reseeding instructions.
