So if an Indian says, "hey, it's kinda BS that we always get portrayed like Apu on the Simpsons" and studios move away from that characterization, would you consider that caving to political correctness?

Political correctness is, by my definition, not being able to voice one's own belief system for the sake of hurting someone else's feelings.
We should be able to be honest with one another in society and everyone would know where everyone stands. Think about how refreshing a 3 yo child's honesty is.
