honestly DT Asheville is like any DT. Bunch of shops and bars and places to eat. They do have several bars with outdoor seating to people watch that wont disappoint. Asheville surprisingly gives Seattle a run for its money on weirdness.
Omni Grove Park would be where I would stay for one night since they have great views and many options to drink and eat on site. However it will cost you so probably not worth it
They do have this cool outdoor spot where it seemed like many locals go in the arts district. I would recommend this spot to go have a few beers and hang out. Look for the Wedge Brewery. Its like 5 buildings sharing this gravel parking lot near the river.
Or plan to eat at Buxton Hall for dinner and there is a several brewery's surrounding BH that you can pass the time at with games. Our table was by the window that overlooked a brewery with outdoor seating and bar games.
I will say this, Asheville loves the game washers! I mean that game is everywhere! I am not even joking when I say that either. They had a washers in the middle of downtown set up in a parking lot for anyone to play
