Even then stir gently. The eggs should be the last thing added after everything else is cooked.

I thought about doing the eggs like that...thats how I do with crawfish boil. I pre boiled them for this batch tho.

It was meh...needs some work. I didnt use my bigger pot and I ran out of room. I used a whole jar of lite kerys roux, 64oz of some shrimp stock I made and 32oz of water. I added a little more water/stock but it was still too thick. I went with baby potatoes whole, sweet corn, tasso, boiled egg, and shrimp. The shrimp and tasso were great. The wife and I were meh on the potatoes. I liked the corn the wife was unsure. Eggs were good...but just eggs coated in sauce lol. I needed a bigger pot to add more liquid in the beginning and let it cook down...it was so thick the roux had a hard time dissolving. It needed more cook time. Next time ill stick to shrimp tasso and dropping egg in at the end.
