I don't think there will be that many dead south of the Wall. Keep in mind Dany did largely took care of the casualties south of the Wall by lighting them on fire. I'm just thinking a few dozen dead people and some animals, with the exception of one place being a notable exception (Casterly Rock would be my guess). It's just clear enough that they're all fricked once the army of the dead shows up. It's not like Zombies if they're bitten that they turn into one. It won't be anywhere near the roster the Night's King currently has at his disposal.

I dunno. We saw at Bran and company's approach to the cave of the 3ER that even skeletons can reanimate and have full locomotion. Proving, I guess, that their movement is wholly magical and doesn't require any musculature. I'd think there are lots of bodies that are at least skeletons many places down south from the recent wars and starvations, etc. Not sure how long a skeleton lasts on average.
Then again, the hand that Mormont sent south with Thorne did rot away (and apparently quit moving) after Tyrion put him in a cell for a long time before seeing him. I'm not sure that was ever put in the show though.
It's either a book/show inconsistency or maybe it can be explained by something like the cold the walkers bring has to be there for something to reanimate.
